Probably the most tender of all the pork cuts. This flavoursome cut is from the muscle that runs alongside the backbone and is a lean and delicately flavoured meat. Great for stir frys!!

Our pork has been matured on the bone for 7 days to maximise it's flavour. The pigs are able to roam freely in a stress free environment which also produces a more flavoursome meat for you to enjoy.
